Blueberry Pancake Casserole
Imagine it’s Sunday morning and the kids are running around and you are looking for the perfect meal that can be for breakfast or brunch. That is what you have found here! The Blueberry Lemon Pancake Casserole is not only delicious and kid approved but it’s healthy too!
What makes this breakfast casserole health you might ask, well it all depends on the main ingredient you choose. For me I choose to use Patty Cakes Potato Protein Pancake Mix.
Patty Cakes Potato Protein Pancake Mix has neutral flavor but packed with goodness. For each serving there are 8 grams of protein making this the perfect morning start.
When ready to eat ( I recommend out of the oven once it’s cooled down) drizzle your favorite organic maple syrup and enjoy! If you happen to have leftovers a great way is to reheating in a pan and cut into slices. It reheats perfectly with butter the next day but a French toast vibe. If that doesn’t sound like something you’d like, you might be like me and enjoy a cold bite right out of the fridge!
Blueberry Pancake Casserole

- 1 9x13 inch baking dish
Ingredients
Casserole Ingredients
- 2 ½ Cups Patty Cakes Potato Protein Pancake Mix
- ½ Tbsp kosher salt
- 2 Large eggs lightly beaten
- ½ Cup 2% milk
- 2 Cups buttermilk
- 1 Tsp baking powder
- 1 Tsp baking soda
- 1 ½ Cups fresh blueberries
- 1 Tbsp freshly squeezed lemon juice
- 1 Tbsp lemon zest
- 4 Tbsp melted butter allow time to cool to the touch
Streusel Ingredients
- 1/2 Cup Patty Cakes Potato Protein Pancake mix
- 3 Tbsp brown sugar can replace with brown sugar substitute
- 3 Tbsp granulated sugar can replace with granulated sugar substitute
- ½ Tsp ground cinnamon
- ¼ Tsp kosher salt
- 4 Tbsp unsalted butter cubed
Instructions
Casserole Instructions
- Coat the 9x13 pan with spray and set oven to 350
- Mix together 2 cups of the pancake mix and salt.
- Add in the lightly beaten eggs, melted butter, lemon juice, and zest.
- Stir lightly until all ingredients are mixed, the batter will be lumpy.
- In a separate bowl mix the remaining ½ cup of pancake mix, backing powder and baking soda. Fold into mix until full combined.
- Fill evenly in 9x13 pan
- Spread blueberries over the top layer and set aside
Streusel Instructions
- Mix together all of the dry ingredients- pancake mix, sugars, and baking soda until well blended.
- mash butter cubes with a fork into the mixture until a crumble mixture is formed.
- Add streusel mix on casserole and bake for 45-55 minutes
