Chicken Spring Rolls with Minute Instant Jasmine Rice. This post has been sponsored by Minute Rice but all opinions are entirely my own.
Did you know that you can make Chicken Spring Rolls in under 15 minutes thanks to Minute Instant Jasmine Rice? Not only do these spring rolls come out amazing, but they taste like restaurant-quality with the convenience of being made at home.
This recipe does call for a few ingredients but if your local store has an international aisle you could find everything with ease. Because I was running low on most of my ingredients I decided to pick up everything new at Publix and I’m glad that I did. I stumbled across the Maggi seasoning and it is a game changer.
Chicken Spring Roll Recipe
For this recipe you will break it into 3 parts.
- Preparing chicken filling + Minute Instant Jasmine Rice
- Mixing spring mix
- Creating your Chicken Spring Roll
Chicken filling
You will need:
Large sauté pan, olive oil, ginger, garlic, ground chicken, chili powder, salt and Maggi Seasoning.
Preparing:
While your pan is heating up prepare your Minute Instant Jasmine Rice according to the package either stove top or in the microwave. Both methods have a 5 minute cook time for a quick and convenient rice option. Set aside when done.
Cooking:
Set your pan to medium high heat and heat the olive oil. Add your ginger and garlic and sauté for 1-2 minutes. Add your ground chicken and brown. Add your chili powder, salt and Maggi Seasoning and cook for 6-8 minutes or until the chicken is fully cooked. Drain and set aside.
Spring Mix
You will need:
Mixing bowl, grapeseed oil, rice vinegar, sesame oil, ginger, sweet chili sauce or sriracha if you like it spicy! and coleslaw.
Mixture:
Add your grapeseed oil, rice vinegar, sesame oil, sweet chili sauce and ginger until well blended. Add your coleslaw and mix until fully coated. Set aside
Chicken Spring Roll
You will need:
Large bowl or room temperature large sauté pan, water and rice rolls.
Prepare:
Poor water into the bowl/pan at least 1 inch deep. Submerge spring roll in water for 3-5 seconds and flip. Submerge for an additional 3-5 seconds or until slightly softened. Any imprint should have faded but do not allow rice sheets to become too soft or they will become sticky. Do not use hot water! Sheets should be slightly hard. Remove sheet and rub access water off. As you are doing this your sheet will become completely softened and ready for your Chicken Spring Roll.
Chicken Spring Roll:
- Add your chicken filling, Minute Instant Jasmine Rice and spring mix in the center of your softened spring mix.
- Starting on the sides, fold over your spring roll.
- Fill one side of the the spring roll over the folded sides & spring mix.
- Roll your spring roll to the unrolled area to complete your spring roll.
Pair your Chicken Spring Roll with more Minute Instant Jasmine Rice and dip in your favorite peanut sauce or teriyaki sauce. For additional side items look for the fresh or frozen stir fry vegetable mix or potstickers.
