This week I am making one of my new favorites, Spinach Artichoke Rice & Quinoa salad. This recipe takes little to no effort and can be enjoyed as is or with added proteins.

15 Minute Meal
The best part about this salad is that you will be enjoying it in no time. Thanks to Minute Rice it takes only 10 minutes to cook making this easy peasy!
Ingredients
Baby Spinach
Artichoke
Parmesan Cheese
Lemon Vinaigrette (Lemon Juice, Salt, Olive Oil)
Instructions
Once you have your ingredients from here it is easy peasy!
Start by cooking your Minute Instant Rice & Quinoa according to the package. Allow it to cool.
While the Minute Instant Rice & Quinoa is cooking, mix together your lemon vinaigrette.
I prefer to use fresh lemon juice but you can use a bottle as well. If you are wanting to use a fresh lemon I recommend rolling your lemon until it is soft. This will make juicing the lemon so easy! Be sure to mix until your salt has dissolved.
Once your Minute Instant Rice & Quinoa is cooled, mix in your baby spinach, artichoke and vinaigrette.
When you are mixing everything I recommend folding it for about 3-5 minutes or until the baby spinach leaves are tender. After it is mixed to your liking add the parmesan cheese and enjoy!
Optional
This salad is delicious with grilled or fried chicken, as well as turkey.
