Ingredients
- 2 cups cooked Minute Instant Brown Rice
- 1/2 cup grated parmesan
- 3/4 cup shredded mozzarella (1 cup for extra cheese)
- 3 eggs
- 1 cup italian-style breadcrumbs
Directions
- Cook 2 cups of Minute Instant Brown Rice according to the box. Allow the rice to cool.
- Mix the cooked Minute Instant Brown Rice, 1 egg, Parmesan cheese, and mozzarella cheese until blended. Do not overmix.
- Whisk the remaining 2 eggs.
- Roll the rice mixture into balls. For bite-sized balls, use a cookie dough scoop. For larger balls, combine 2 scoops.
- Coat the rolled rice balls in the egg wash.
- Coat the rice balls with breadcrumbs.
- Preheat the air fryer to 375 degrees.
- Cook for 10-15 minutes or until golden brown.
- Enjoy with your favorite sauce while warm.
